Games
Jade has only been in five games, so collecting all of the games she's in wouldn't be hard at all: Mortal Kombat II, Ultimate Mortal Kombat 3, Mortal Kombat Trilogy, Mortal Kombat Deception, and Mortal Kombat: Shaolin Monks
Comics
The comic series by Malibu (which is no longer in production), had a lot of nice pictures of Jade in them. As far as I know the stories she appears in are Battlewave, Rayden vs Kano, and Mortal Kombat: Tournament Edition.
Card Game
She has a lot of cards in the Collectable Card Game, which is also no longer in production, so you'd be lucky if you were able to find some -- ebay would be your best bet.
Epic Battles TGC
A new card game based on various fighting games with Mortal Kombat being one of them. The designs are based on Deception and Jade has a lot of cards in the series. Right now you can find the cards at various blockbuster stores.
Movies
Fortunately she's only been in one movie, Annihilation -- which pretty much screwed her over completely, but because of what happened to her in the movie there she probably won't be in anymore -- but you never know!
Toys
Three toys that I know of have been released for her: two Trilogy figures, one is really small and comes with hook swords, the other is 11 inches and actually comes with her correct weapon. In another country there also seems to have been released a MK2 figure of her which was basically just a repainted Kitana figure.
